Be my Valentine Sun-dried Tomato Hummus

Happy Valentine’s day everyone! Today I’m going to a small get together with my coworkers so I thought I’d bring along a little something yummy. This sundried tomato hummus takes no time at all and is sure to wow. Tastes great in salads, and sandwiches too.  Here’s the step-by-step:

Health stuff: Dips like hummus can have a high fat content, but you can replace some of the oil with water. Besides, it’s a great source of protein and some fats are good for you!

  • 1 can low-sodium garbanzo beans
  • Sun-dried tomatoes packed in olive oil
  • 1 small clove of garlic
  • Tahini (sesame seed paste)
  • olive oil
  • Salt


To Prepare:

  1. Drain and rinse 1 can of garbanzo beans
  2. In a food processor, combine the garbanzo beans with 2 tbsp of tahini, 1/4  cup of sun-dried tomato, and 1 small clove of garlic.
  3. Add a drizzle of olive oil (you can use some of the oil the tomato is packed in), and some water to loosen it up.
  4. Pulse until the hummus is smooth.
  5. Taste test: It’s important to cook to your own taste! Please have a taste, add water if you need to, add more salt, or olive oil, even add a splash of lemon juice! You can definitely make this your own. I found the 1/4 cup sun-dried tomatoes to be just about enough, but you can certainly add more for a stronger punch of tomato.
  6. Serve with a drizzle of olive oil and some slivered sun-dried tomatoes!
  7. Enjoy with a bowl full of baked pita chips!
