Parsley Mint Chimichurri

Ingredients

  • 1 cup parsley packed
  • 1 cup fresh mint about 5 sprigs
  • 3 cloves garlic
  • 1 lemon juiced
  • ½ cup olive oil
  • 1 tsp crushed red pepper
  • 1 tsp salt
  • pepper to taste

Instructions

  • Place all the ingredients in a food processor.
  • Pulse to combine. It should be broken down, but not pureed.
  • Assess the texture and adjust salt, lemon juice or seasoning. Add water if you'd like to thin it out.

Notes

  • You may add 2 tbsp red wine vinegar if you have it on hand for a more authentic taste. 
  • Serve fresh or store in refrigerator in an air tight container for 3-4 days.
