Sundried Tomato Hummus

Ingredients

  • 1 16 oz low-sodium garbanzo beans drained and rinsed
  • 1/4 cup Sun-dried tomatoes packed in olive oil
  • 1 small clove garlic
  • 2 tbsp Tahini sesame seed paste
  • olive oil
  • Salt

Instructions

  • In a food processor, combine the garbanzo beans with 2 tbsp of tahini, 1/4  cup of sun-dried tomato, and 1 small clove of garlic.
  • Add a drizzle of olive oil (you can use some of the oil the tomato is packed in), and some water to loosen it up.
  • Pulse until the hummus is smooth.
  • Taste test: It's important to cook to your own taste! Please have a taste, add water if you need to, add more salt, or olive oil, even add a splash of lemon juice! You can definitely make this your own. I found the 1/4 cup sun-dried tomatoes to be just about enough, but you can certainly add more for a stronger punch of tomato.
  • Serve with a drizzle of olive oil and some slivered sun-dried tomatoes!

Notes

Enjoy with a bowl full of baked pita chips!
