Happy Valentine’s day everyone! Today I’m going to a small get together with my coworkers so I thought I’d bring along a little something yummy. This sundried tomato hummus takes no time at all and is sure to wow. Tastes great in salads, and sandwiches too.
Here’s the step-by-step:
Health stuff: Dips like hummus can have a high fat content, but you can replace some of the oil with water. Besides, it’s a great source of protein and some fats are good for you!
You Will Need
Only a few simple ingredients:
- 1 can low-sodium garbanzo beans
- Sun-dried tomatoes packed in olive oil
- 1 small clove of garlic
- Tahini (sesame seed paste)
- olive oil
- Salt
Sundried Tomato Hummus
Servings: 6 people
Ingredients
- 1 16 oz low-sodium garbanzo beans drained and rinsed
- 1/4 cup Sun-dried tomatoes packed in olive oil
- 1 small clove garlic
- 2 tbsp Tahini sesame seed paste
- olive oil
- Salt
Instructions
- In a food processor, combine the garbanzo beans with 2 tbsp of tahini, 1/4 cup of sun-dried tomato, and 1 small clove of garlic.
- Add a drizzle of olive oil (you can use some of the oil the tomato is packed in), and some water to loosen it up.
- Pulse until the hummus is smooth.
- Taste test: It's important to cook to your own taste! Please have a taste, add water if you need to, add more salt, or olive oil, even add a splash of lemon juice! You can definitely make this your own. I found the 1/4 cup sun-dried tomatoes to be just about enough, but you can certainly add more for a stronger punch of tomato.
- Serve with a drizzle of olive oil and some slivered sun-dried tomatoes!
