Make sure that all the pits are removed. Drain and transfer to a food processor. Squeeze out any excess water.
Add the remaining ingredients: peanut butter, almond flour, chia seeds and hemp seeds and vanilla extract.
Pulse to combine, scraping the edges if they begin to stick.
Once combined the consistency should be sticky, but not too wet. It should be firm enough to roll into balls. If the consistency is too wet, add 1 tbsp almond flour at a time until you reach the desired consistency.
Roll the mixture into equal sized balls. (Around 1 inch diameter)
Optionally, roll the balls in a light coating of cocoa powder or crushed peanuts.
