Smashed Chickpea Tahini Sandwich

Ingredients
1
16 oz can
garbanzo beans
drained and rinsed (or 1 1/2 cup cooked)
1/4
cup
red onion
chopped finely
1
small carrot
grated
2
stalks
celery
chopped finely

tbsp
tahini paste

tbsp
vegan mayo
(or can sub 1 additional tbsp tahini)
1-2
tsp
dijon mustard

tbsp
fresh dill
chopped finely

tbsp
lemon juice
salt and pepper
to taste
Sandwich Toppings (choose as many as you would like)
Dried cranberries
Sliced red onion
Sliced tomato
Pickled jalapeno
Smoked paprika
Instructions
In a Bowl
Combine all ingredients in a bowl and mash with a fork until you reach an even consistency.
Taste and add salt and pepper, lemon juice as needed.
In a Food Processor
Add all ingredients to food processor and pulse 2-3 times.
Scrape off the sides of the food processor and pulse a few more times.
Serve on harvest bread, topped with dried cranberries, lettuce, tomato, red onion, pickled jalapeno and a sprinkle of smoked paprika.
Notes
You may toast the bread before assembling the sandwich.
If it is too thick or difficult to combine, add 1-2 tbsp water.
Feel free to serve with whichever toppings you desire.
If preparing in a food processor, you may not need to chop the ingredients as finely.
