Smashed Chickpea Tahini Sandwich

Ingredients

  • 1 16 oz can garbanzo beans drained and rinsed (or 1 1/2 cup cooked)
  • 1/4 cup red onion chopped finely
  • 1 small carrot grated
  • 2 stalks celery chopped finely
  • 3 tbsp tahini paste
  • 2 tbsp vegan mayo (or can sub 1 additional tbsp tahini)
  • 1-2 tsp dijon mustard
  • 2 tbsp fresh dill chopped finely
  • 1 tbsp lemon juice
  • salt and pepper to taste

Sandwich Toppings (choose as many as you would like)

  • Dried cranberries
  • Sliced red onion
  • Sliced tomato
  • Pickled jalapeno
  • Smoked paprika

Instructions

In a Bowl

  • Combine all ingredients in a bowl and mash with a fork until you reach an even consistency.
  • Taste and add salt and pepper, lemon juice as needed.

In a Food Processor

  • Add all ingredients to food processor and pulse 2-3 times.
  • Scrape off the sides of the food processor and pulse a few more times.
  • Serve on harvest bread, topped with dried cranberries, lettuce, tomato, red onion, pickled jalapeno and a sprinkle of smoked paprika.

Notes

  • You may toast the bread before assembling the sandwich. 
  • If it is too thick or difficult to combine, add 1-2 tbsp water. 
  • Feel free to serve with whichever toppings you desire. 
  • If preparing in a food processor, you may not need to chop the ingredients as finely.
