
I’ve been enamored by this creation ever since I saw beautiful vibrant red images of it floating around on instagram. Who would have guessed that beets in hummus would make the perfect combination! This is now vying for a spot as my all-time favorite hummus!
Beets are high in essential vitamins and minerals and so easy to sneak in to a protein-packed hummus. I enjoyed this all week in wraps and with carrots or chips. It adds a lovely sweetness to the hummus that is well balanced by the garlic and lemon. And it’s so easy to make!
Plus, it has this vibrant red/pink color that is so inviting and so gorgeous!
Cooking the Beets
I chose to cook my beets in the instant pot. Simply add 2 cups of water to the Instant Pot and add 3 small peeled beets in, on top of the wire rack that comes with the instant pot. Pressure cook on high for 15 minutes and quick release the steam. My Heart Beets has a great foolproof recipe for pressure cooking beets here.
If you do not have an Instant pot, you may boil or steam them on the stovetop for around 30 minutes until fork tender.

Beetroot Hummus
Ingredients
- 3 small beets
- 1 can garbanzo beans drained and rinsed
- 1 clove garlic
- 2 tbsp lemon juice to taste
- 2-3 tbsp tahini paste
- 2-3 tbsp extra virgin olive oil
- 1/2 tsp salt to taste
Instructions
Cook the Beets: Instant Pot
- In the instant pot: add 2 cups of water.
- Add 3 small peeled beets on the wire rack that comes with the instant pot, or in a steamer basket.
- Pressure cook on high for 15 minutes, quick release.
Cook the Beets: Stovetop
- Steam or boil the beets in a pot on the stovetop for around 30 minutes. Note: cutting the beets in quarters will speed up the process.
Prepare the Hummus
- Carefully remove the beets from the instant pot or pot and allow them to cool. Cut them into quarters once cooled.
- In a food processor, add chickpeas, tahini, garlic, lemon juice, olive oil, salt and beets.
- Pulse to combine. Add water as needed to thin out the hummus.
- Taste, and add more lemon juice or salt as needed. It should be smooth and creamy.
