What if I said one minute is all you need to make yourself a decadent, fudgey, chocolatey dessert? With Valentines day around the corner, all you need to do is run to the kitchen and whip up this last minute dessert. The best part is that it’s healthy! It is gluten-free, made from almond meal and sweetened with a refined-sugar free date syrup. But I promise you, you won’t be able to tell the difference.
Now, I’ve never really been one to celebrate Valentine’s day. But I do appreciate an excuse to eat yummy treats. No issues with that! and this is one I can feel good about! I also never get tempted by much in terms of sweets….except chocolate! I have such a weakness for chocolate and this mug cake is fudgy and rich–everything I look for in a desert! Honestly, I can’t say enough good things about this so I’ll just move on to the recipe.
Almond Meal
In this recipe, I used almond meal as the base. You can use fine almond flour as well. It is a great gluten-free alternative that’s high in protein and fiber. It gives a nice texture to the mug cake.
What Makes it Vegan?
Instead of milk, I used almond milk to thin out the mug cake. I also added a tiny bit of ground flax, which is an egg replacer, to help make this mug cake more gooey and fudgey. I also used Trader Joes Semi-Sweet chocolate chips, which are dairy-free. Generally, chocolate chips that are 80% cacao are considered vegan.
Vanilla Extract
While vanilla extract isn’t essential to the recipe, it adds an amazing depth of flavor. I used Nielsen Massey pure vanilla extract which was gifted to me for this recipe.
Microwave Mug Cake
This recipe does use the microwave. That’s what makes it a 1 minute dessert. Some people tend to avoid microwave ovens for fear of radiation or that it may cause or loss of nutrients to the food. The evidence of this is not conclusive. Any form of cooking can reduce the nutrient value of food. If microwaves allow you to have a quick and easy healthy meal, I don’t see a problem with it. That’s just my two cents! I will however recommend that you do not use a plastic container in a microwave as it may leach harmful chemicals into the food. I used a ramekin or a ceramic mug.
1-Minute Decadent Vegan Chocolate Mug Cake
Ingredients
- 6 tbsp almond meal or almond flour
- 1 tsp flax meal
- 1/4 tsp baking powder
- 1 tbsp cocoa powder
- 1/4 tsp vanilla extract
- 2 tsp date syrup or sweetener of choice
- 1 tbsp dairy free chocolate chips
- 2 tbsp almond milk
Instructions
- In a bowl, combine all dry ingredients. Reserve a few of the chocolate chips to add on top.
- Add in the almond milk, starting with 1 tbsp. For a fudgier mug cake, add more.
- Separate into 2 mugs or ceramic ramekins.
- Top with a few chocolate chips.
- Microwave: Start with 1 minute and Add 15 seconds at a time until you reach your desired consistency. For a more brownie-like consistency start at 1 minute 30 seconds.
- Feel free to top with a drizzle of date syrup.
