Rosemary Meyer Lemonade

A friend of mine gifted me about 20 beautiful Meyer lemons from her tree. They say Meyer lemons are a mix between a lemon and a mandarin orange. They have a lovely sweetness to them. So of course, I decided to make a refreshing Meyer lemonade. And for a special twist, I added rosemary to the simple syrup. It was so cooling and delicious!

Meyer Lemons

It was so easy to make and is a great option for summer barbecues or socially distant get togethers. I do prefer to keep the different components of the lemonade separate so people can mix a drink with the level of sweetness of their choosing, but I’ll also provide an option to create a pitcher.

Step 1: Squeeze the Lemons

This one is tough work! But I put on some music and got to work! 20 lemons left me with about 2 cups of lemon juice, which is WAY more than you will need. About 10 lemons should yield 1 cup.

Step 2: Make Rosemary Simple Syrup

Combine 1 cup cane sugar (or granulated sugar if you prefer), and 1 cup of water in a saucepan. Bring to a boil and reduce to simmer on medium, stirring occasionally. Once it comes to a boil and all the sugar dissolves, remove from flame and add 3-4 sprigs of rosemary. Allow this to chill before adding to the lemonade.

Step 3: Make the Lemonade!

Combine 1 cup of the lemon juice and 1 cup of the simple syrup into a pitcher. Add 2-3 cups cold water. Add more syrup or water to reach your desired sweetness. My favorite extra kick is to add a teaspoon of salt into the lemonade to balance the tartness/sweetness. Add plenty of ice to keep this chilled.

Garnish with a few slices of lemons and some sprigs of rosemary.

Party Tip

Create a DIY lemonade bar! Display the lemon juice in separate jars and allow guests to mix their own lemonade! You may also create different simple syrups for them to mix – plain, lavender, or mint, using the same preparation!

Ingredients

  • 1 cup cane sugar or granulated sugar
  • 1 cup Meyer lemon juice
  • 3-4 sprigs rosemary
  • 2-3 cups water or more to taste
  • 1 tsp salt

Instructions

Make a simple syrup

  • Bring sugar and water to a boil in a saucepan. Reduce to simmer and stir constantly until the sugar dissolves. Add 3-4 sprigs rosemary and remove from flame.
  • Allow this to cool completely

Make Lemonade

  • Combine 1 cup of lemon juice and 1 cup simple syrup in a pitcher.
  • Add 2-3 cups water and 1 tsp salt. Stir well.
  • Add more simple syrup or water to reach desired sweetness.
