Some people call this vegan tuna salad sandwich. I think It’s really because tuna salad has this creamy, mayonaisey texture. However, this sandwich really deserves a name of its own! Smashed chickpeas, packed with flavor with nutty tahini paste, red onion, fresh dill and spicy mustard. A sprinkle of smoked paprika gives this sandwich an extra something special.
It’s easy to make and prep for weekday sandwiches, wraps or salads. Serve in a leaf of romaine lettuce for a fun chickpea lettuce wrap!
In a Bowl
If you don’t have a food processor. It’s easy to combine all the ingredients in a bowl, and smash away with a fork. This may require a bit of muscle, but you are left with some fun, cruncy textures.
In a Food Processor
If you’re short on time, combine all the ingredients in a food processor, and pulse a couple times, scraping off the sides until the mixture is nice and even.
- Chickpeas
- Red onion
- Celery
- Dill
- Tahini Paste (I get mine from Nomadsmarketplace)
- Vegan Mayo
- Spicy Mustard
- Lemon
- Smoked Paprika
Make it Your Own
For Low- Carb: Try these smashed chickpeas as a lettuce wrap on a leaf of romaine, in a collard green wrap or on top of a salad
For Oil-Free: Omit the Vegan Mayo and add 1 tbsp of tahini extra. You may need to thin this out with a bit of water and reduce the amount of spicy mustard used.
For Extra Spicy: Top the sandwich with a drizzle of sriracha or some pickled jalapeño peppers.
Smashed Chickpea Tahini Sandwich
Ingredients
- 1 16 oz can garbanzo beans drained and rinsed (or 1 1/2 cup cooked)
- 1/4 cup red onion chopped finely
- 1 small carrot grated
- 2 stalks celery chopped finely
- 3 tbsp tahini paste
- 2 tbsp vegan mayo (or can sub 1 additional tbsp tahini)
- 1-2 tsp dijon mustard
- 2 tbsp fresh dill chopped finely
- 1 tbsp lemon juice
- salt and pepper to taste
Sandwich Toppings (choose as many as you would like)
- Dried cranberries
- Sliced red onion
- Sliced tomato
- Pickled jalapeno
- Smoked paprika
Instructions
In a Bowl
- Combine all ingredients in a bowl and mash with a fork until you reach an even consistency.
- Taste and add salt and pepper, lemon juice as needed.
In a Food Processor
- Add all ingredients to food processor and pulse 2-3 times.
- Scrape off the sides of the food processor and pulse a few more times.
- Serve on harvest bread, topped with dried cranberries, lettuce, tomato, red onion, pickled jalapeno and a sprinkle of smoked paprika.
Notes
- You may toast the bread before assembling the sandwich.
- If it is too thick or difficult to combine, add 1-2 tbsp water.
- Feel free to serve with whichever toppings you desire.
- If preparing in a food processor, you may not need to chop the ingredients as finely.
