It’s cold outside! A good part of the country has been facing some pretty nasty weather and winter storms! So I figured it’s a perfect time to cozy up at home with some warming soups! These soups are some of my faves and are just perfect, nourishing and delicious.
1. Spicy White Bean Stew with Kale and Potatoes
If you’re looking for a hearty, nourishing soup, this is it! It’s a rich, thick and fragrant soup loaded with cannelini beans, potato and lacinato kale, simmered in a, sauce of crushed tomatoes, white wine, rosemary and thyme. It’s a comfort food recipe for sure!
2. Curried Butternut and Delicata Squash Soup
This one’s a classic! Creamy and mildly sweet with a slight kick to it from the curry powder. This recipe uses two types of winter squash, but you could use any one you have on hand. This one’s a crowd pleasure for sure!
3. Sweet Potato Two Bean Chili
A hearty chili good for any time of year! What I love about this recipe is that it thickens up faster than regular veggie chili because of the starch in the sweet potatoes and it also keeps you full. It’s a complete meal! Super healthy, spicy and delicious. I used two different types of beans, sweet potatoes, fire roasted tomatoes, jalapeno, peppers and onions. The seasoning was just cumin, smoked paprika and garlic powder. It also freezes well for a yummy dinner later!
4. Thai Red Curry Carrot-Lentil Soup (Instant Pot)
One of my favorite soup recipes, inspired by my favorite Thai flavors. It is healthy, but also addictively flavorful, with carrots, lentils and coconut milk simmered with ginger and red curry paste. It’s garnished with some lime and fresh chopped cilantro. The lentils add extra fiber and protein, but you won’t even notice it!
5. Creamy Roasted Red Pepper and Garlic Soup
This recipe was posted on my old blog, back when I knew nothing about food photography and all I knew was good food! 🙂 It is a creamy and delicious soup that would be a perfect complement to a nice grilled (vegan) cheese or a toasted slice of bread. The ingedients are simple – red peppers, garlic and basil, and it’s made creamy with cashews!
6. Carrot Lentil Harissa Soup
If you’re craving something a bit SPICY, this is it. I used spicy Moroccan harissa to season this soup. It is also creamy with the addition of coconut milk and slightly sweet with the addition of carrots. This recipe is so unique and super tasty!
7. Yellow curry Noodle Soup
There’s nothing like a warm bowl of Ramen or noodle soup on a cold day. This one’s so LOADED, with ingredients and flavor! It’s got tons of veggies like zuchinni, bok choy, broccoli and bean sprouts, tofu for extra protein and rice noodles. The broth is a slightly creamy one with coconut milk and curry powder. It is perfect !
