One of the favorite parts of my mornings is enjoying a loaded bowl of oats. Now as the summer months are upon us, hot oats don’t quite appeal to me. I’ve made the switch to a cold bowl of overnight oats. These blueberry walnut overnight oats are so easy to prepare and are a creamy, light and refreshing start to the day.
Eight Ingredients
- Oats (Instant or Rolled Oats)
- Plant milk (I used Oat milk)
- Chia Seeds
- Blueberries
- Banana
- Walnuts
- Maple syrup (or date syrup)
- Cardamom Powder
Keep in mind that all the ingredients for these overnight oats (minus the oats and plant milk) are optional and interchangeable. Have only strawberries and almonds on hand? Great! Care to leave out the sugar or add brown sugar? Awesome! Fancy cinnamon to season the oats rather than cardamom? That sounds delicious too!
Just remember to start with a 1:1 ratio for oats and plant milk. You can add more on top once it’s ready if you prefer a creamier cup of overnight oats.
Instant Oats vs. Rolled Oats
For this recipe, I prefer to use instant oats. The reason for this is that it gives a more milky, cereal-like consistency. It is also useful if you forget to set your oats overnight (which I often do!). You can make it in the morning and it’s ready in 20 minutes – 1 hour. If you use rolled oats, I’d recommend soaking for at least 6 hours. It also will be a thicker, more pudding-like consistency. The benefits of rolled oats is that it does have more fiber and nutrients than instant oats, which is slightly more processed.
Easy Cardamom Blueberry-Walnut Overnight Oats (Vegan)
Ingredients
- 1/3 cup Instant oats or rolled oats
- 1/3 cup Plant milk I used oat
- 1 tsp chia seeds
- ¼ tsp cardamom powder
- ½ tsp maple syrup or date syrup
Toppings
- ½ banana sliced
- 1 handful blueberries
- 1 handful chopped walnuts
Instructions
- In a glass or container, combine the oats, plant milk, chia seeds, cardamom powder and maple syrup.
- Stir well and store in the refrigerator overnight. Multiply the recipe if you'd like to store several jars worth of overnight oats.
- When you are ready to eat, top with some banana, blueberries, walnuts and a splash more of plant milk if you'd like it extra creamy.
Notes
- If using Instant Oats, you may only need up to 1 hour of soak time.
- Make up to 5 days worth of overnight oats by multiplying the recipe.
- I used oat milk for extra creamy oats, but feel free to use almond, soy or whichever plant milk you enjoy.
