Parsley Mint Chimichurri is an authentic South American sauce perfect for summer barbecues or for topping on sandwiches and veggies. Chimichurri is a seasoning popular in South America. Specifically, Argentina and Uruguay. It is typically used as a herby and fresh seasoning for meats. I lived in Argentina for two years growing up, but since I did not eat meat, I never actually tried it there! My first time trying it was at an empanada store here in the U.S.!
This Parsley Mint chimichurri is garlicky, fresh and so delicious to top on sandwiches, empanadas, grilled veggies or wraps. I used mint because it is so fresh and delicious and also because parsley really isn’t my favorite herb! Traditional Chimichurri calls for red wine vinegar, but I didn’t want to have to run to the grocery for just 2 tbsp of red wine vinegar, so I used lemon juice. If you have red wine vinegar on hand, feel free to add some but otherwise lemon juice works great!
Step 1: Place all the ingredients in a food processor
It’s really that simple! Toss in your favorite herbs – I used a bunch of mint, a bunch of parsley, 3 cloves of garlic, the juice of a whole lemon and some sea salt and crushed pepper flakes. Add in a half a cup of extra virgin olive oil and pulse to combine.
Step 2: Assess the texture and seasoning
Chimichurri is not supposed to be blended to a fine paste. You’re supposed to be able to see pieces of the individual herbs and seasonings. Taste it and adjust salt and pepper to taste. Add lemon juice or olive oil if needed or water if you’d like to thin out the sauce a bit.
Parsley Mint Chimichurri
Ingredients
- 1 cup parsley packed
- 1 cup fresh mint about 5 sprigs
- 3 cloves garlic
- 1 lemon juiced
- ½ cup olive oil
- 1 tsp crushed red pepper
- 1 tsp salt
- pepper to taste
Instructions
- Place all the ingredients in a food processor.
- Pulse to combine. It should be broken down, but not pureed.
- Assess the texture and adjust salt, lemon juice or seasoning. Add water if you'd like to thin it out.
Notes
- You may add 2 tbsp red wine vinegar if you have it on hand for a more authentic taste.
- Serve fresh or store in refrigerator in an air tight container for 3-4 days.
