Peanut Butter Cocoa Energy Bites

Peanut Butter Cocoa Energy Bites! These guys are so convenient to have on hand! I am heading out of town on a long trip this week and decided to make a few to take with me for when I get hungry.

They take only 10 minutes to make and are so much fun! I typically enjoy them as a quick post-workout snack or early morning before a workout if I don’t have time to eat. They are also great as an afternoon pick me up.

The main ingredient in these are mejdool dates. You mix them together with some peanut butter, almond flour, high quality cocoa powder, and add some chia seeds and hemp seeds for some extra protein and fiber.

For a little extra fun I decided to toss them in different coatings. Some are in a coating of ground peanuts, some in cocoa powder and some are just au naturale! They are so easy to make I think you’ll make them a staple in your weekly meal prep!

Feel free to experiment with different add-ins. You could add coconut, peanuts, or chocolate chips!

Peanut Butter Cocoa Energy Bites

Cook Time10 minutes mins
Soak time1 hour hr
Course: Dessert

Ingredients

  • 10-12 mejdool dates
  • 2-3 tbsp high quality cocoa powder
  • 1/4 cup natural peanut butter
  • 1/4 cup almond flour
  • 2 tsp chia seeds
  • 2 tsp hemp seeds
  • 1 tsp vanilla extract

Instructions

  • Soak the dates in warm water for 1 hour
  • Make sure that all the pits are removed. Drain and transfer to a food processor. Squeeze out any excess water.
  • Add the remaining ingredients: peanut butter, almond flour, chia seeds and hemp seeds and vanilla extract.
  • Pulse to combine, scraping the edges if they begin to stick.
  • Once combined the consistency should be sticky, but not too wet. It should be firm enough to roll into balls. If the consistency is too wet, add 1 tbsp almond flour at a time until you reach the desired consistency.
  • Roll the mixture into equal sized balls. (Around 1 inch diameter)
  • Optionally, roll the balls in a light coating of cocoa powder or crushed peanuts.
  • Store in the refrigerator until ready to eat!

Notes

Optional add ins: peanuts, coconut, chocolate chips
