Waking up to a breakfast that tastes like dessert, but is good for you is simply heavenly. These parfaits are so pretty and feel like a treat. They are vegan and assembled with homemade maple pecan granola, berries, coconut, chia seeds and plant based yogurt.
How to build a breakfast parfait?
Step 1: Yogurt
This goes without saying. My favorite plant based yogurt is Forager Project Cashewgurt. I use the plain unsweetened yogurt. In my opinion this is the most similar taste to dairy milk yogurt. You may also use home made non-dairy yogurt or almond, soy or coconut milk yogurt.
Step 2: Fruit
Right now, berries are very much in season. They are sweet and slightly tart and make for an amazing parfait. I used blueberries and strawberries in my parfait. You may also use banana, or any other fruit you have in season. In the winter months, I stew down my berries into a compote, like this strawberry chia jam, or I use frozen berries, but you ideally want berries that are in season for the best taste.
Step 3: Granola
I was late to the granola bandwagon. It always had too much sugar and I wasn’t sure how to use it. That was until I started making my own granola. This home made Maple-Pecan Tahini Granola is EVERYTHING! It is slightly sweet, has nuts from the pecans and gives you the right amount of crunch and texture for your parfait.
Step 4: Nuts and Seeds
My granola already had pecans in it, so I did not add any additional nuts. You may want to add slivered almonds, pumpkin seeds or any nuts of your choosing. I added chia seeds, an excellent source of vegan Omega-3s. Other seeds you can add include sesame seeds and hemp seeds. All are amazing sources of healthy fats, protein and all around nutrition.
Step 5: Optional Add Ins
For my parfaits, I added some toasted shredded coconut and a drizzle of Just Date Syrup. Maple syrup, or if you are not vegan, honey would also work for added sweetness.
How to Assemble
Parfaits are great for make-ahead breakfasts or to enjoy immediately as a dessert. Simply divide yogurt, fruit, granola chia seeds, coconut and date syrup between two small bowls or glasses and refrigerate overnight or serve! An approximate recipe is included below, but feel free to experiment with your own proportions as per your preference.
Vegan Berry Granola Breakfast Parfait
Ingredients
- 1 cup Plant based yogurt I use Forager Cashewgurt
- ¾-1 cup Granola I used my maple pecan tahini granola
- ⅔ cup cut fruit I used strawberries and blueberries
- 2 tsp chia seeds
- 2 tsp desiccated coconut
- 1 drizzle just date syrup or sweetener of choice (optional)
Instructions
- Divide yogurt between two bowls small glasses or containers. Add half of the granola to each bowl.
- Top with 1/3 cup cut fruit on each bowl and 1 tsp of chia seeds and desiccated coconut to each bowl.
- Optional: Add a drizzle of just date syrup to each bowl or sweetener of choice.
- Store in the refrigerator for the next day, or serve immediately!
